menu plan Monday

Let me just say that I successfully stuck to our menu last week...every single night! I was impressed with myself & happy that we saved money by not eating out. Here is our menu for this week:

Monday: Peanut Satay Chicken with edamame saute

Tuesday: Grilling out hot dogs...guilty pleasure of mine:)

Wednesday: Mellow Mushroom with the ladies!

Thursday: Breakfast for dinner...blueberry pancakes and bacon

Friday: Chicken spaghetti

Here is the recipe for the lemon thyme chicken from last week...it got 2 thumbs up from Ben!

Lemon Thyme Chicken
2 chicken breasts
2 tbsp lemon juice
thyme (fresh or dried)
oregano (fresh or dried)
3/4 cup white wine
14 oz. chicken broth
1 tbsp cornstarch
2 tbsp water

Preheat a large saucepan on medium-high heat. Season chicken with salt and pepper, add oil to pan, and add chicken. Cook on each side (a few minutes each) until browned. Stir in lemon juice, wine, broth, thyme, and oregano; cover. Cook and stir 8-10 minutes...turning chicken occasionally. Remove chicken from pan. Combine cornstarch and cold water until smooth and pour into pan. Bring to a boil. Cook the sauce for a few minutes until thickened. Slice the chicken & top with the sauce.

I've made myself get back in the workout groove. Grayson and I have been walking every single morning at the crack of dawn before it reaches 97 degrees. When he takes a morning nap I've been doing one of my video workouts. Ben has even started P90X and I am absolutely convinced that he's crazy. I survived 18 minutes of the P90X plyometrics and then about died. I do have a goal weight in mind but my main goal is to be comfortable enough to wear my old 2 piece bathing suits at the beach...which is the last week of July.

SO, this is where you people come! I'm on the hunt for healthy recipes that me & the picky hubs can enjoy. Do you have any healthy dinners you want to share?? Pretty please?

I like the new blog design! And congratulations on sticking to your meal plan! I'm horrible at doing that. =/

My favorite healthy meal is Morningstar Farms Spicy Black Bean Burgers with a tossed or caprese salad. Those veggie burgers are also really good instead of greasy, yucky meat in taco shells. Even my carnivore husband likes those veggie burgers.

Haha! That's awesome! Those words always make laugh. I'll try those! I've only had the regular veggie burgers and they are good!

We grilled out hot dogs last night and it was sooooo good! And I even went for the real ball park hot dogs, not the usual fat-free ones ;) Simple summer pleasures.

At Target, they have a magnetic meal planner notepad by Real Simple... it's pretty awesome for when you're preplanning meals!
