I have been trying really hard to plan ahead for my lunches during the week. If I don't have anything set aside for my lunch, I always just end up eating junk.  I need easy & fast things for home and work, so I finally decided to give the mason jar salad a try! I'm sure you have probably seen these all over the internet. I was always a little unsure if they actually lasted.

I made the Skinnytaste Asian Chopped Salad with Sesame Soy Vinaigrette.

They were so good & lasted until Friday without getting soggy! The prep was a little intense. I tried to do it when my kids were awake and it took way too long. Lesson learned! I made these again for this week but can't wait to try other recipes!

Tuesday: Tacos
PF Chang's Chicken Lettuce Wraps - A copycat recipe that you can easily make in just 20 minutes. And it tastes a million times better too!
Thursday: Grilled Chicken Sandwiches
Friday: Cheeseburgers & baked beans
Saturday: Hot dogs & S'mores over the fire pit. Can you tell the kids picked this meal?!
